I like the idea but I would rather play a single player simulation that I can run at my own pace ala Football Manager than it aligning with the actual season.
Rugby League Manager is a poor man's Football Manager but it fills the gap. I'd rather play that than a fantasy NRL simulation.

I think it sounds like a good idea, but building a model like this which reflects well enough the real world would be pretty tricky. I have a bit of experience developing Bayesian models used in sports analytics and they are hugely computationally intensive and even then are a pretty massive simplification of the real world. Interested to know how you were thinking of developing this in practise as I think the fantasy community would only be interested in something which reflected real life.
