Big name injuries, multiple good looking cash cows popping up but uncertainty on minutes/role, poor week 1 scores across the board from typically high scoring players, and a new interchange rule that not even the coaches seem to have a good understanding on how to best use

If you got it right and one of your players is getting the minutes you hoped (or more) I wouldn't doubt their ability just yet. a) an injury
b) they were a complete unknown so you had no ability judgement to go on, looks like you picked the wrong cow
c)they got less minutes

exactly. players tend to start the season slow, you can just tell that from watching the games that they aren't firing on all cylinders yet. Don't make overreactions when there is nothing telling you to do so except a bad score. Sometimes players have a poor game, look at why and if there wasn't a reduction in minutes, an injury, or a change in their role then there is every chance they bounce back

I like your logic. Listened to the arguments for Ah Mau at the start of the season and reasoned that it was a good selection so will keep the faith there. And the attacking stats for Carter along with his previous scores have had me questioning him all week, plus I can just downgrade Cartwright to him next if he backs it up this week.
