    Had some porterhouse for dinner tonight. Got a particular butcher I go to for top quality cuts. Coles/Woolies meat is trash. Perfectly medium rare every time. My steak game is on point these days, along with the perfect peppercorn gravy. *chef's kiss*

    Cast iron fry pan is the POD.

    A good way to do the perfect steak is to reverse sear them. Set the oven to 55c (rare) - 60c (medium rare). Wrap the steak in foil, let them cook for a couple hours, then take them out take the foil off and into a very hot pan/grill plate and a couple minutes each side to get a seat/colour onto them and voila. I bought some high grade Japanese Wagyu a while back and did it this way - incredible experience.

    I am yet to try the reverse sear strategy. Kind of too lazy to start cooking till I'm actually hungry. This has inspired though OB and might give it a crack this weekend.

    @OB didn't feel like a beer last night so just threw it in the pan with no prep. I've got a couple of pieces left so if I do have a beer tonight or tomorrow night I'll give it a crack.
