Starting props usually have two stints with a rest in between, which lets them have a better workload than those that come off the bench and play in one big stint. Also, at the start of the game nobody is terribly tired and the defense can work together better as a team so nobody is missing tackles as a result of a broken line. The only advantage of coming off the bench might be that they can find some TBs against an already tired defence, but since both sides usually have some fresh men coming on about the same time I find this is usually pretty negligible. IMO You always want your player starting regardless of whether their minutes change or not.
